Raw materials are removed from their outer packaging in a
special "decant area" to prevent any bacteria being transferred into the
factory. Some ingredients, are sieved at the same time.
If product involves the use of cream or has been cooked
then it moves into a separate sealed area of the factory known as a
"high care" or "high risk" area. Employees handling
uncooked product are not allowed in those areas, and the product does not
leave the high care area until it is chilled or frozen to the desired
temperature and sealed in the first level of packaging.

The
Supply Chain.
Factories need to produce a
consistent range of products the year round, whether it is jam, yogurt or
fruit pies. Many ingredients supplied to the manufacturing industry are
frozen. The products available from Newberry International Produce are good
examples of this. By carefully selecting fruit or vegetable at the time of
harvest, size grading, sorting, washing and freezing quickly we ensure high
quality, consistent product is available for the food industry. The quantities
used are huge. For example, we supply 1,000 tonnes of frozen strawberries to one customer
each year, and that is only part of their requirement!
